Egg Free Mayonnaise

Free From: gluten, dairy, yeast, egg, soy, nut
- 75ml of Cold Water
- 2 1/2 tbsp of Ener-G Egg Replacer
- 2 1/2 tsp of Dry Mustard
- 1 1/2 tsp of Sugar
- Black Pepper Or White Pepper For Taste
- 1 tsp of Ener-G Xanthan Gum
- 2 tsp of Fresh Lemon Juice
- 240ml of Extra Light Olive Oil
- 1 1/2 Refrigerated Yeast Cubes
- 180ml of Lukewarm Water
In a medium mixing bowl, whisk the Ener-G Egg Replacer and water until foamy, about 1 minute. In a smaller bowl, mix together the mustard, sugar, pepper, Ener-G Xanthan Gum and set aside. Mix in the lemon juice to the Egg Replacer mixture, and whisk for 20 minutes.
While still mixing, sprinkle in the dry mix and whisk briskly. Pour mixture into a blender or a food processor to add the oil. You can whisk by hand at a fast pace if you don’t have a blender. Start adding the oil slowly while whisking the mixture briskly. Keep adding the oil until all the oil is in the mixture ans whip until a creamy texture is acquired.
Refrigerate any leftover mayonnaise
